Healthy July 4th Recipe: Red, White & Blue Strawberry Cannolis

 

Celebrate Independence Day without splurging. This festive dish will satisfy your cravings, brighten your table and keep your diet on track.

 

12 large red ripe strawberries, washed and cored

12 blueberries

1/2 cup ricotta cheese

1 tablespoon sugar-free, vanilla Tarani syrup 

Dash of cinnamon

Unsweetened coconut 

Grated sugar-free chocolate

Chopped nuts (chopped pistachios, pecans or hazelnuts are great)

 

Instructions:

1. Wash and core strawberries. Leaving a hollow in the berry. Set aside.

2. Mix the ricotta, syrup and cinnamon together until well combined. Spoon mixture into a snack sized resealable bag. Seal.

3. Cut the corner off of the bag and pipe the mixture into hollowed strawberries. Place a fresh blueberry on each end.

4. Garnish with chocolate, coconut and/or nuts.
